Granny's Apple Cake
3 eggs, beaten
1 1/2 cup of salad oil
2 cups of sugar
3 cups of all purpose flour
1 teaspoon of soda
1 teaspoon of salt
1 teaspoon of cinnamon or 1/2 teaspoon of apple pie spice
1 teaspoon of vanilla or 1/4 teaspoon of maple flavoring
3 cups of finely chopped raw apples
1 cup of flaked coconut, optional
1 cup of nuts, if black walnuts, use 1/2 cup
Instructions:
Bet the eggs, sugar and oil together. Sift together the flour,
soda, salt and cinnamon. Add the dry ingredients to egg mixture.
Beat well. Add the vanilla and fold in nuts and apples. Bake in
loaf or layer pan at 350ºF. May be baked in a
tube mold about one hour at 350ºF. or slightly longer at 325ºF.
Icing:
1 cup of brown sugar, firmly packed
1/4 pound of margarine or butter
1/4 cup of evaporated milk
maple or other flavoring
Stir sugar, milk and butter together. Boil for three minutes on
medium heat. Stir in flavoring a few drops. Add confectioners
sugar to stiffen if needed. Cool and spread on cake.
