| Chocolate Icebox Treat
1 box of vanilla wafers, crushed 1 cup of butter 2 cups of powdered sugar, sifted 3 whole eggs 2 packages chocolate chips, melted and cooled 1 pint of cream, whipped 1 tablespoon vanilla 2 tablespoons sugar
Instructions:
Cream butter and powdered sugar until light, puffy, and peaks form. Add the eggs, one at a time, beating well after each. Fold in the melted, cooled chocolate chips. Season the cream with the vanilla and sugar, and whip. Very carefully, fold the seasoned cream into the chocolate chip mixture. Line a 10" by 14" pan with half of the crushed vanilla wafers. Carefully pour the chocolate mixture over, distributing evenly. Cover with the other half of crushed wafers. Cover with foil and refrigerate several hours or overnight, or freeze for another time. Cut into squares and garnish with whipped cream before serving. Serves 12ºF.
