Cake: 5 eggs, separated 6 tablespoons of sugar 1/2 cup of all purpose flour 1/2 teaspoon of vanilla extract
Mocha Cream Filling & Frosting: 1 cup of butter or margarine, softened 4 1/2 tablespoons of confectioners' sugar 2 tablespoons of unsweetened cocoa 2 tablespoons of strong, cooled coffee 2 cups of whipping cream, whipped
Instructions: Beat egg yolks with sugar, mix in flour and vanilla. Fold in stiffly beaten egg whites, spread mixture on a buttered waxed paper lined jelly roll pan. Bake at 350ºF. for 15 minutes, transfer to a dampened cloth dusted with confectioners' sugar. Roll cake in cloth, cool. Beat butter and confectioners' sugar, stir in cocoa and coffee. Unroll pastry, cover with a thin layer of mocha cream and whipped cream. Reroll cake (without cloth) cut off 2 ends diagonally, reserve. Cover cake and 2 slices with remaining mocha cream, place 1 slice on top of cake, the other slice on the side of cake ( to resemble branches). With a fork, trace lines into the cream to simulate the bark.
